The 2018 Year-End Seminar on the project of National Key R&D Program of China was held on January 20, 2019 at SZU, with the research topic on Quality Function Deterioration and Quality Reduction Mechanism in Food Processing of “Study on Component Structure Change and Quality Control Mechanism in Food Processing”. Leaders and some teachers and students of the research group attended the seminar, including the project consultant Prof. Steven F. Chen, the Dean of IAS, Prof. Ka-Wing Cheng, the project leader. The seminar was addressed by Prof. Steven F. Chen, presided by Prof. Ka-Wing Cheng.
Aiming at the problems of deterioration and loss of quality in food processing, safety problems, and lack of theory of quality reduction, the subject "The deterioration of quality function and the mechanism of quality reduction in food processing" attacks the question of the deterioration and loss of quality in typical processing of grain, oil, fruit and vegetable, livestock and poultry, aquatic products and condiments, and focuses on solving the correlation mechanism between key structure (domain) and quality function deterioration in typical food processing, which could enrich the basic theory of quality assurance and loss reduction and reduce quality deterioration and loss in food processing, and improve the universal nutritional health.
The subject is led by Prof. Ka-Wing Cheng, joined by Institute of Food Science and Technology CAAS, Southwest University, Shandong Agricultural University and Sichuan Food Fermentation Industry Research and Design Institute. Firstly, Prof. Cheng explained the background and requirements of the seminar. Next, the sub-project leaders introduced the requirements of expenditure, subject adjustment and item application in the course of implementation. Afterwards, the five sub-project leaders gave their talks respectively. They shared with the annual progress of the research task, the achievement of targets, the implementation of funds, the existing problems and the next work plan. The project consultant Prof. Chen reviewed all the research tasks stipulated in the task book and he also raised some hopes and demand.
This seminar summarized the research progress of the subject, discussed the financial audit matters of the subject and the research tasks and key objectives of the subject in 2019 were also clarified.
